    A delicious and popular chicken dish that is made with a fortified wine and mushroom sauce. The wine is reduces to make a rich sauce that has onions plenty of mushrooms.

    Ingredients

    • 4 boneless, skinless chicken breasts (about 1 1/2 pounds 680g) pounded until 1/4" thick.
    • Kosher salt and freshly ground black pepper, to taste
    • 1/3 cup (50 g) Wondra flour (can substitute all-purpose flour)
    • 5 Tbsp. olive oil
    • 5 Tbsp. unsalted butter
    • 8 to 10 ounces (230-280g) white button mushrooms
    • 2 - 3 large cloves garlic, peeled and minced
    • 2 Tbsp. minced shallots
    • 1 teaspoon cornstarch
    • 2/3 cup dry Marsala wine
    • 1/3 cup chicken stock
    • 2 Tablespoons chopped parsley
